I’ve dehydrated peppers, beans and tomatoes and stored them. I put them together to use them for when I make stews. It works really well.

Of course it’s a lot easier to get a meal ready in a jar. I do this for home and give them away for Christmas gifts. I did pint jars for my parents for their RV. Mom cooks in a 2 quart slow cooker since it is just her and my dad. Just use what you’ve dehydrated.
It’s all a matter of survival. Dehydrated food lasts longer. Don’t forget to date anything you store and rotate the products. I would make sure you dehydrate what you like to eat or items that you can mix in meals like in the video.
